"My family and I found this dish a little bit too bland even after topping the aubergine with red pesto. We added slices of stilton cheese on our plates and that made it tastier. If I made this again, I would use sundried tomatoes and olives and just stronger ingredients, e.g. halloumi cheese instead of mozarella (as suggested by earlier posters). "

The ultimate makeover: Chocolate brownies

"Double thumbs up for this recipe. I used chocolate with 60% cocoa solids, used Hellman's Light Mayonnaise, reduced sugar to a total of 100g, forgot to add the tablespoon of warm water, omitted the coffee, added a banana instead and it still came out fab. I cut them into 16 pieces which is about right as they taste surprisingly rich for something low fat. Will definitely make it again and yes, very definitely recommended!"

Ultimate chocolate cake

"I have made this cake many times and thankfully it has worked every single time and always had rave reviews. Reducing the amount of sugar (to 250g) makes it less sickly. For the ganache, I just put the chocolate pieces into the saucepan with the warm cream and take it off the heat and stir till chocolate melts. I found that heating the cream to just warm enough to melt the chocolate made it less runny and it was perfect for spreading on the cake. From past experience, adding a small dollop of cold cream to an over-runny ganache made it much less runny. I halved the ingredients for the ganache and there was still plenty for one middle layer, the topping as well as a bit left over for extra. The cake was delicious. Such a wonderful recipe. Thank you BBC Good Food!"

Raspberry Bakewell cake

"Just made this with preserved Morello cherries instead of raspberries. It is lovely and moist and so easy to make. Next time, and there will very definitely be a next time, will make it with a sharper fruit or use less sugar as I like my cakes less sweet. I also did not have flaked almonds and did not sprinkle with icing sugar. Overall, double thumbs up for a delicious and easy dessert. Thanks!"

"Much easier to make than I expected for brioche. I used chocolate chip instead of apricot. It is a good recipe but I´m only giving it 4* as I thought it was a bit dry. Otherwise, both my husband and I liked it."
