Chinese roast duck

"I made this for a dinner for four and it was scrumptious. I hadn't roasted a duck before and I found this recipe easy to follow. I changed a few things because I didn't have the right ingredients (I used rice wine vinegar, maple syrup and Chinese 5 spice instead of red wine vinegar, maltose syrup and star anise) and used just one large duck instead of two smaller ones, which extended the cooking time, but the results were still excellent. "

"I loved this dish but I used a whole can of coconut milk, as instructed, and the curry rather swamped the rice! Apart from that, it was great and I will certainly make it again."

"A winner with my husband but I made a few changes, taking out the cinnamon and dates and replacing the tomato puree with madras curry paste, which I added with the olive oil and simmered until fragrant. I also added a chopped red pepper and garlic clove and added 200ml extra water with 200g brown rice to make it into a one-pot dish. So I guess that makes it more an Indian-style dish..."
