"yum, this was so nice. I added some warm asparagus to it. The mint worked really well with all the other ingredients, I used the juice of 1/2 a lime as we were out of lemons but I'm sure that made no difference! Will definitely be making this again. "

"I used a can of light coconut milk it didn't split but there was a skin on the top which I had to remove before my son would go near it!!! Really liked this, so easy to make and so few ingredients. I added some grenadine to make my pale rhubarb a nice bright pink colour."

"I was really looking forward to this as I love rhubarb, unfortunately I was quite disappointed with the end result, it was very heavy - more puddingy than cakey!!"
