"This is really lovely. I soaked my fruit for about 2 hours in the tea, sugar and malt mixture before proceeding with the recipe. This was enough to plump up the fruit and I have 2 lovely moist loaves with fruit evenly distributed. It's like Soreen but so much nicer!"

"This turned out really well. I didn't have raisins in at the time, so used some dried, ready to eat apricots (the dark, non-sulphured ones). I chopped them up, chucked them in the pan with a few extra spices (which included a good pinch or 2 of chilli flakes, some ground cloves, ground coriander seeds etc.) and it has turned out fantastic! Will definitley make again, as I still have lots of apples to use up. Try experimenting with a few more spices - it worked really well for me!"

"Oh wow! I made this at the weekend, but substituted mulberries for blackberries as I have access to a mulberry tree which is dripping with fruit at the moment. It is fantastic! I also sprinkled a little extra demerara sugar over the top before baking. It is so moist and delicately coconutty, and the bright purple fruits look fantastic against the pale sponge. I made 2 trays of this as I had so many berries. I took one tray round to my sister's to let her have a few pieces, and she wouldn't let me take any home! I planned on freezing one, but after the weekend, the family have devoured the lot and are asking when I'll make it again! Top marks from me! Try it, it's sooo good!"
