Smoked salmon rotollos
19 comments
"I was worried about the slicing up at the end here ie whether to use a serrated knife (which I guess is best for cutting smoked salmon), or an unserrated one (which I imagine would be best for cutting tortilla)? So there was a little sawing/switching of knives (on my part) and tearing (on the part of the food) and sometimes the tortillas unravelled a bit. A tip for anybody yet to make this - if you cut off a slice and it looks less than perfect, turn it over - the other side may look better - this happened to me with a few slices :-). I couldn't comment on the taste as I am a vegetarian and I got no comments on it from my guests."

"Absolutely divine! I didn't fancy eating the coriander or chilli, and didn't think my guests (both in their 80s) would either, so I topped the pineapple cubes with the yummy sweet and sour topping and scattered a 'rim' of coriander around the edge of the plate and put a circle of long but thinly sliced chilli on top as a garnish. It looked as pretty as a picture, and both I and my guests thoroughly enjoyed it :-) I am serving it again tomorrow for another drinks party. I read everyone else's comments and initially tried spearing the pineapple onto cocktail sticks to make it easier to pick up but I test drove it in the kitchen and the cocktail stick came away without the pineapple (canned pineapple, maybe the cocktail stick thing works with fresh?). But sooooo tasty, definitely a lifelong favourite! "

"Yummy! I halved the recipe (ie to serve 2, and was planning on eating the other half on another night) but single-handedly polished off the lot :-) I loved the colours coming together when you put the veg into the squash - gorgeous! I took note of other people's comments and needed to cook the squash for longer too."

"Absolutely gorgeous! I made this on the spur of the moment, so had to adapt some of the ingredients: I used butternut squash and swede instead of the pumpkin and parsnip and I used sage not thyme. Is there a mistake in the recipe though as it says to put the breadcrumbs/cheese on top when it goes in the oven, but to stir after 40 minutes, so surely the breadcrumbs/cheese will be all mixed in (and soggy!) but the picture of the finished meal on the plate shows them on top and all nice and golden. I loved this meal and will be making it again."
