"This has become one of my favourite mid-week meals as it is so easy, flavoursome, wholesome, and great heated up the next day. I particularly enjoy the fact that there are no onions to chop, as I am absurdly sensitive to them! I usually add some tomato puree and a slug or two of wine (either colour) to intensify the sauce. It is also nice with marinated/roasted artichoke hearts instead of peppers, I picked up the wrong jar in the shop but it was just as good! Paprika is a good idea, must try that next time."

"This was, as everyone else has said, brilliant. Hard to believe that something so speedy and simple can be so flavoursome. I used a tomato and olive stir-through sauce, as that is what was in the cupboard, and added some spinach to the topping. Mmmmm! Also great cold for lunch the next day. You can't go wrong with this!"

Ratatouille with goat's cheese & herby crumble

"I thought this was excellent. The crumble with pesto in was a great idea, and unlike Moosepup's experience, mine was very crispy and the chunky veg was still recognisable. I made up the whole thing to the end of step 4, went out for a drink with some friends, and bunged it in the oven when we all got back. I found it only needed about 15 mins in a hot oven. "

"I really like this recipe, although I usually jazz it up a little with some white wine instead of water and added spring veg such as courgettes (I used asparagus the other day which was gorgeous). The great thing about it is that you can use storecupboard ingredients: the halloumi keeps for ages vacuum-packed, the artichokes come from a jar and I use frozen veg, so it is a useful emergency veggie meal. I find it goes best with some buttered new potatoes. "

Raspberry & pine nut bars

"I agree these are fantastic. I made them in a static caravan in the middle of the Scottish Highlands (!) - I couldn't get pine nuts at the local shop so used flaked almonds which worked well, though probably don't give the same unusual tang. Excellent for dessert or just with coffee - a warning though: don't go deluding yourself that these are healthy, they have a whole pack of butter in them! All wholesome stuff though. "
