Summer-in-winter chicken

"I have to add my voice of praise for this recipe - it really is delicious. I made it for the first time yesterday and we loved it. As suggested by others here, I added a finely chopped onion but didn't change anything else. Yummy! I will be making this lots and lots."

"I have also made this many times and it's a big fish favourite of ours - especially in the winter served with crusy bread. I didn't feel the need to change anything in the recipe as it's perfect as it is."

"Easy, quick and tastey. I also put 3 tsp of harissa in the stew and used 1.5 chicken stock cubes to give the cous cous more flavour. Everyone loved it so I will be making this again."

"Ooops! I did change one thing in the recipe! I used white basmati rice as I don't like the brown and as you can see from my comments above, it worked very well. PS: I cooked the rice in my rice boiler"

"I made this as a side dish for a crowd so doubled the quantities and made it one day ahead of the party. I don't think I would change anything in the recipe because this rice dish received lots of compliments on the day and several guests asked me for the recipe. It is very easy to make - the most labour intensive part being slicing the spring onions! Perfect for buffets and barbecues. Easy, fresh and delicious."
