"i tried a few practice sponges from this site and this was the best ...or least rubbery. cooked and rolled up and back out fine. i made one with gluten free s/r flour for my mum and one with ordinary flour for the kids and they both cooked and tasted the same. i used brandy in the creamfor the wheat free grown-up version and that was fine, the other one i filled with betty crocker buttercream frosting and covered with a chocolate fudge type homemade icing ....i think chocolate log is for the children really and they wouldn't fancy the brandy and mascarapone version. the buttercream tasted really good with all that chocolate so will do that again"

Best-ever brownies

"i've been making these since they appeared in the mag in may 2003 and they are the best ever. i manage to do it all in one bowl - ie do the eggs and sugar in a large bowl then add the rest. always find the baking time a bit fiddly; i tend to leave the chunks out - milk or dark chocolate goes all runny and i tend to burn white chocolate"
