Very simple but tasty low fat soup with is very healthy

Ingredients

  • 2 red peppers
  • 1 small red onion
  • 2 cloves of garlic
  • 12 cherry tomatoes
  • 1 tbsp vegetable oil
  • 1 vegetable stock cube
  • Crushed black pepper
  • 570 ml boiling water

Method

  1. Preheat oven to 180c

  2. Chop peppers and onions into chunks

  3. Place peppers, onions, garlic and tomatoes in baking tray. Drizzle with oil and roast in oven for 15 mins

  4. Desolve stock cube into boiler water

  5. Mix all ingridients together and liquidise until smooth

  6. Season to taste
