For all those people who don't have a sweet tooth or want a healthy alternative from all that chocolate then this one is for you... Baked Easter Eggs

Ingredients

  • 2 small red onions
  • 2 tins of chopped tomatoes
  • handful of basil
  • 2 garlic cloves
  • 1 small chili
  • 4 eggs
  • feta
  • 2 tablespoons of black olives
  • 2 teaspoons of tahini

Method

  1. Dice up your red onion, garlic and chili and fry in your pan with a little oil until soft

  2. add in the chopped tomatoes, olives, tahini and some of the torn up basil leaves and leave to simmer away until thicker (about 8 minutes)

  3. transfer into your baking dish and make 4 dips in the sauce, attempt as best as possible to crack an egg into these

  4. scatter the remaining basil leaves and crumble the feta on top

  5. bake in the oven for about 8 minutes on a low heat
