Homemade peppermint slice

Ingredients

Base

  • 1 packet of sweet milk biscuits
  • 1/2 tin of condensed milk
  • 1/4 cup of sugar
  • 1/4 cup of cocoa
  • 125gm of butter
  • vanilla essence

Middle

  • 1 cup of icing sugar
  • 1 tbsp of butter
  • 2 tbsp of milk
  • 1 tsp of peppermint essence

Topping

  • 60gm cooking chocolate

Method

  1. Microwave condensed milk, sugar, cocoa, and butter on high for 4mins. Stir in biscuits and vanilla essence. Press in to tin and leave to cool in the fridge.

  2. Mix icing sugar, butter, milk and peppermint essence in to paste. Spread over biscuit base.

  3. Melt chocolate in microwave or in a pot over boiling water. Spread over peppermint icing. Leave to set.

Just made the peppermint slice recipe. I'm disappointed. Not like the peppermint slice I know & love from childhood. I haven't tasted it yet but I can tell by the tasting going along its uber sweet, even for my sweet tooth.The biscuit base was a bit oily & now it's cooled seems hard, the middle isn't an icing sugar fondant but a buttercream you'd get in a cake. It was hard to get the melted chocolate on top. I had to make double the amount of middle to cover the base even though I'm using a small baking tin. Won't be using again. I just want a decent recipe for old fashioned peppermint slice but I haven't found one yet. Grrrrr
