Easy apple cake recipe, makes a delicious family dessert.

Ingredients

  • 2 eggs
  • 200gm caster sugar
  • 100gm butter
  • 150ml 50/50 milk & cream mix
  • 175gm plain flour
  • 3 X 5ml spoons baking powder
  • 3 medium sized bramley cooking apples

Method

  1. Preheat oven to 180deg (fan) Cooking time 25-30 minutes Grease then flour 20x30cm roasting tin

  2. Whisk the eggs and caster sugar until thick and creamy. Put butter and milk into a pan, bring to boil and stir still boiling into the eggs and sugar.

  3. Sieve the flour and baking powder into the batter and fold in so that there are no lumps. Pour the mixture into the prepared tin.

  4. Peel, core and slice the apples and lay them on the batter, sprinkle with a little caster sugar. Bake for 25-30 minutes until risen and golden brown. Cool in the tin until ready to serve
