Method

  1. Put the lemons, blackberries, mint leaves, sugar and 200ml water into a food processor. Blitz until everything is finely chopped and juicy. Strain through a fine sieve, bottle and chill until ready to drink. Will keep for up to a week. Top up with an equal measure of chilled fizzy water or Prosecco to serve.

This is great to be frozen into cubes or ice lollies for the kids - they adore them. I'm not such a fan of it in proseco/fizzy water as its very bitty

Just tried this, found it to be really sour and added 4 tbsp caster sugar to make it a bit sweeter although it could probably have done with more. Only added about 4 mint leaves which for my taste was enough. Not sure I would make again although really easy to make. Also peeled lemons first.
