Method

  1. Heat the oil in a pan. Season the steaks, then fry for 2-3 mins each side for medium rare, or cook more to your liking. Remove from the pan, then set aside to rest.

  2. Add the mushrooms and thyme leaves to the pan, then cook for a couple of mins until softened and golden. Pour in the wine and bubble until syrupy, then turn off the heat and stir in the butter. Season.

  3. Serve the steaks with the mushroom sauce poured over, along with creamy mash and some crunchy spring greens.

I made this with the creamy mushroom sauce instead of the red wine one. I also added two crushed cloves of garlic. Was a lovely meal, and will definitely have it again.

It was good, but the sauce was too runny. Did anyone else find that it took quite a long time to reduce?

A quick and easy sauce that tasted scrummy. I added a by more wine as I think I reduced it down a bit too much to start off with.

Excellent recipe, and the sauce was very tasty. I served it with parsley and wholegrain mustard mash, with some green veg on the side.

This was lovely. Very easy to make and the mushrooms were lovely and flavoursome. Definitely a good, quick and easy mid-week (or any time!) meal.
