Method

  1. Heat oven to 190C/170C fan/gas 5. Line a 12-hole muffin tin with muffin cases. Beat the soft cheese with 25g of the sugar and chill until needed. Heat the cranberries together with another 25g of sugar until they start to pop. Mash lightly and cool.

  2. Sift the flour into a large bowl and add the remaining sugar, baking powder and a pinch of salt. Add the eggs, oil, vanilla and cranberry mixture, and stir together. Don’t worry if the mix looks a bit lumpy. Divide it between the cases, they should look about two-thirds full. Make a small dip in the centre of each and put a blob of soft cheese in. Bake for 25 mins or until risen and golden. Cool on a wire rack.

I've made these with both cranberries and blueberries and love both versions, in fact I'm making blueberry ones again today. The cream cheese is just delicious and they always go down a treat :)

Carnavel girl - They froze well and went down a storm for brekkies at Christmas with the family.

Many thanks for that comment.... as that was my next question! Making another batch today in payment for something a neighbour gave us.... she just can't get enough of my version with the cherries in... so will give her a whole batch and she can freeze the ones she can't eat!

OMG!! I used up some very ripe cherries instead of cranberries in this recipe.... stoned them and just added them in. I was light on caster sugar so used soft brown instead in the main recipe part (used what caster I had left with the cream cheese) and added in a teaspoon of almond essence.....
They are SO good!!!

I used creme fraiche instead of cream cheese, delicious!

I can't get hold of any fresh cranberries now, so does anyone have any ideas as to what I could use instead?

Really great and moist muffins, my husband especially loved them. In Norway cranberries are not that easy to come by, but I used dried cranberries that I heated with some water in addition to the sugar and that worked great.

okay, but think there are other muffins out there i'd rather make. wasn't too keen on the cream cheese once cooked.

My batter turned a horrible color when I mixed in the berries but luckily they baked up alright. The taste is VERY good! I am going to play a little bit with less sugar and possibly part wholewheat flour next time and see how they come out.

That's funny I live in France too but luckily managed to find Cranberries in Leclerc and a local Deli/epicerie. These muffins were delicous I made them for the school teachers as a Christmas gift and one of them has just asked me for the recipe because they loved them so much. Definately a winner!

Living in rural France Cranberies are not readily available so I used a good cranberry sauce. It worked very well and cut out one process of the recipe. They froze well and went down a storm for brekkies at Christmas with the family.
