Carrot, apple & celeriac mash

Method

  1. Put the celeriac, carrots and apples in a large pan of water, bring to the boil and simmer for 20 mins until tender. Drain, tip back into the pan and mash roughly. Stir in the rest of the ingredients. Cover and keep warm until ready to serve.

    I made this, but didn't have creme fraiche so used a bit of cream instead. It was okay, but next time I think I will blend it to a smooth puree instead, a I didn't like the roughly mashed texture (mine looked jus like the picture above)

    I was looking for a recipe to use half a celeriac I had in the bottom of my fridge, when I came across this one. I didn't follow it exactly, I only had two carrots and I used two apples and some fresh cream and some lemon juice. I did add a bit of salt and pepper and some chopped parsley. We quite enjoyed it!

  • 4 eating apples ,about 500g/1lb 2oz, peeled and cubed
  • 4 tbsp crème fraîche
  • 1 tbsp butter
  • 4 tbsp finely chopped parsley
