  • 6 tbsp light soft cheese with garlic and herbs


  1. Put 2 tbsp of the stock in a non-stick pan, then cook the onion for 5 mins until softened – add a splash more stock if it starts to dry out. Add mushrooms and garlic and cook for 2 mins more. Add the rice and lemon zest and juice, mixing well. Pour in remaining stock and seasoning and bring to the boil. Turn down, cover and simmer for 25-30 mins until rice is tender. Stir through half each of the chives and soft cheese, then serve topped with the remaining chives and soft cheese.

The recipe also works well with cauliflower rice to further reduce the calories but you'll need to reduce the amount of stock or drain it off at the end.

Nice fresh flavours, and tastes nice after being frozen and reheated another day. Make sure completely cold before freezing though for safety. Yum.

Didn't have chives so chopped up some spring onions to put on top instead. Very tasty and interesting, but I think the portion sizes were a bit small.

Made this without any cheese because I didn't have any. Tasted great, very easy to make and a good budget meal. Recommended without the cheese!

This was really disappointing, and the name 'lemony mushroom pilaf' is misleading, it only tasted of the soft cheese, and it overpowered any other flavour to the detriment of the dish. Maybe if you use less cheese it would be nicer, but i won't be making it again to find out.
