Banana & Chocolate Muffins

Delicious and easy to make muffins that turn out perfectly every time!

Method

  1. Preheat the oven to 200C / Fan 180C and grease muffin tins.
  2. Sift the flour and baking powder together into a mixing bowl.
  3. Add the sugar and salt.
  4. Melt the butter in a saucepan over a medium heat.
  5. Remove from the heat and whisk in the eggs and milk.
  6. Once evenly mixed, fold into the flour with the mashed bananas, the chocolate drops and walnut pieces.
  7. Spoon the muffin mixture into greased muffin tins and bake for 20 minutes until golden.
  8. Remove from oven and leave to cool for 10 minutes

    Not as good as those I've made with oil rather than butter. Won't make again - bit heavy and not well risen

    I also often substitue olive oil spread for butter with equally good results. The muffins have always risen well for me!
