Creamy pesto with prosciutto dippers

Method

  1. Mix the soft cheese with 2 tbsp basil pesto. Take the pack grissini (bread sticks) and halve each one. Cut the prosciutto into strips and wrap around the end of each grissini. Serve alongside the pesto dip. Scatter the pine nuts over dip and drizzle with extra virgin olive oil before serving.

    I made it for the end of term Italian class and my Italian teacher was very impressed with the pesto dip. Very easy to make and the home-made dip gives this special quality to the popular snack.

    I made a few modifications for a party, 1 tablespoon (Very cheap) greek yoghurt, 1 tbsp garlic and herb philli and another very large scoop of plain philli- thats what I had in fridge! Same amount of pesto- didn't have the nuts, but to be honest it didn't last long enough for anyone to notice!! Was gorgeous and have given out recipe lots since! Also prosciutto sticks were nice but do go a bit soggy after a little while!

    when would you suggest to wrap the ham to avoid the breadsticks from becoming soggy? and at the same time have them ready before the guests come?

    Great canape. Much enjoyed by guests but you must leave the ham wrapping to the very last minute to avoid droopy breadsticks! Also don't use mascapone because it splits when you add the pesto.

    Absolutely Delicious and really simple to make! Made this as part of a nibbles selection I did for a party recently. It was a huge hit - i used a variety of breadsticks rather than grissinis and it worked a treat. Visually great as well - didn't put the oil or pine nuts on top but still was awesome. After the bread sticks were gone it was attached with crisps, tortilla chips and chicken skewers!! Quick and Tasty - Complete winner!
