Banana muffins for any occasion - perfect for lunch or as a desert with custard.

Ingredients

  • For the Muffin
  • 355 ml (1.5cups) plain flour
  • 5 ml (1 tsp) baking soda
  • 5 ml (1 tsp) baking powder
  • 2 ml (1/2 tsp) salt
  • 3 large ripe bananas (mashed)
  • 177 ml (3/4 cup) sugar
  • 1 whole egg lightly beaten
  • 78 ml (1/3 cup) butter (melted)
  • For the topping
  • 78 ml (1/3 cup) brown sugar
  • 15 ml (2 tbsp) plain flour
  • 15 ml (1 tablespoon) butter

Method

    1. Pre heat oven to 190c
    2. Grease a muffin tin with butter
    3. Combine all of the muffin ingredients in a bowl and mix well - a food processor will also do a very good job
    4. Pour into the muffin tin until each well is 3/4 full
    5. Combine the sugar and flour for the topping in a separate bowl and cut in the butter until the mixture goes crumbly (like an apple crumble topping)
    6. Add the topping mixture to the top of each muffin
    7. Place in the over for 20 minutes or until golden brown
    8. Cool on a rack and then serve
