Smoked trout pâté

Make these little bites for a party and everyone will think you've spent hours in the kitchen, but they're really quick to make

Method

  1. Mix the cream cheese with a flaked fillet of hot smoked trout, lemon juice and snipped chives. Spread onto toasted pitta triangles and sprinkle with more chives to serve.

Quick prawn cocktails

Put 600g peeled prawns in the bottom of 8 small glasses. Chop 2 ripe avocados and toss in 2 tbsp of lime juice. Divide between the glasses, top with chopped tomato, a dollop of crème fraîche and some snipped chives. Serve with a teaspoon on individual small plates. Makes 8.

Chorizo & scallop skewers

Slice 3 or 4 chorizo cooking sausages into chunks and fry in a little oil until cooked through. In a separate pan, fry the scallops (for up to 6 minutes), turning once, until browned, remove from the heat and drizzle with a little oil from the chorizo pan. Thread a scallop and piece of chorizo onto the end of small bamboo skewers and serve. Makes 16.

    In place of the smoked trout, we used two smoked mackerel fillets to 200g cream cheese. My husband is mildly addicted to smoked mackerel and said it was yummy.

    Dead easy, tasty, nicer than shop-bought and ingredients are easy to source. Made it as part of a New Years Eve buffet, served in bouchee cases and it went down a storm. Will definitely make it again. Probably for next New Years Eve.

    Yep, really tasty, and really easy! I used about 1 lemon for it...but basically just did it according to taste.
