Courgette, mozzarella & pea-shoot rolls
Canapés don't need to mean lots of work, as this easy one shows

- Slice the courgettes into thin strips, fry in oil and allow to cool. Spread each slice with pesto and put a wedge of mozzarella and 3 pea shoots, or a sprig of watercress at one end, with the shoots sticking out at one side. Roll up and serve standing up on their flat end.
Asian vegetable wraps
Thinly slice 1 red onion, 2 carrots and 1 red pepper. Toss in 3 tbsp of chilli dipping sauce, along with 150g of beansprouts and some chopped mint. Soak 12 rice wrappers in hot water until soft and drain. Pile the filling in the middle, fold in the corners and roll. Slice in half to serve. Makes 12.
