Courgette, mozzarella & pea-shoot rolls

Canapés don't need to mean lots of work, as this easy one shows

Method

  1. Slice the courgettes into thin strips, fry in oil and allow to cool. Spread each slice with pesto and put a wedge of mozzarella and 3 pea shoots, or a sprig of watercress at one end, with the shoots sticking out at one side. Roll up and serve standing up on their flat end.
Try

Asian vegetable wraps

Thinly slice 1 red onion, 2 carrots and 1 red pepper. Toss in 3 tbsp of chilli dipping sauce, along with 150g of beansprouts and some chopped mint. Soak 12 rice wrappers in hot water until soft and drain. Pile the filling in the middle, fold in the corners and roll. Slice in half to serve. Makes 12.

    I didn't find this recipe particularly easy and they weren't very popular. The courgettes need to be sliced really thinly otherwise they don't roll up well and after sitting for 15 minutes they were swimming in a pool of juice. Having planned to make double this recipe I gave up and used the grilled courgettes to make a delicious salad instead

    this is delicious! Everyone loved it at our Christmas party and it's simple and looks very pretty too - which is always a plus!

    I used yellow courgettes and the result looked really good and went down well with everyone. I would definately make them again. I sliced the courgettes thinley and made sure they were well drained with kitchen roll before putting everything together. Use really good mozzarella and pesto.
