Pappardelle with roast veg & sage
Pasta is filling but doesn't have to be fattening, as this dish delivers a healthy meal in under 500 calories

- Heat the oven to 200C/fan 180C/gas 6. Put the squash, pepper, onions and garlic on a large baking tray. Drizzle with 2 tbsp olive oil, a pinch of chilli flakes and season well. Roast for 25 minutes. During the last 15 minutes of cooking add the sage leaves and lemon slices.
- Cook the pasta following packet instructions. Toss with the roasted vegetables and serve with a little grated parmesan if you like.
