Pappardelle with roast veg & sage

Pasta is filling but doesn't have to be fattening, as this dish delivers a healthy meal in under 500 calories

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Put the squash, pepper, onions and garlic on a large baking tray. Drizzle with 2 tbsp olive oil, a pinch of chilli flakes and season well. Roast for 25 minutes. During the last 15 minutes of cooking add the sage leaves and lemon slices.
  2. Cook the pasta following packet instructions. Toss with the roasted vegetables and serve with a little grated parmesan if you like.

    I tend to leave out the sage and toss the pasta in pesto before adding to the main dish. Also nice with cooked salmon flaked in.

    Really tasty dish. I had run out of olive oil, but the dish works really well with sesame oil too.

    Absolutely delicious! First time ever we had butternut squash and it was a big hit! My partner is not a big veggie eater but this went down a treat!
