Steak with shiitake & miso sauce
Steak can be healthy - this Japanese-style dish comes in at under 500 calories and takes minutes to prepare

- Heat the oven to 200C/fan 180C/gas 6. Mix the miso, mirin, and honey. Rub the beef with a tiny amount of oil and season. Heat a frying pan until hot and sear on both sides. Remove and brush with half the miso mixture all over. Put in a baking dish.
- Toss the mushrooms with the soy and garlic and a splash of vegetable oil. Arrange over the beef, season with pepper, sprinkle over the sesame seeds then roast for 15 minutes for medium rare. Rest under foil for 5 minutes. Serve with blanched green beans and the remaining miso sauce.
