Waldorf salad
A simple version of a classic, ideal for a quick packed lunch

- Cut the apple and sticks celery into chunks. Mix with the mayonnaise and toasted walnuts. Serve on salad leaves.
Ginger prawn rice salad
Mix 1 tbsp white wine vinegar with 1 tbsp sugar and 2 tsp grated root ginger. Toss with shredded carrot, cucumber and red chili and mix with 150g cooked basmati rice. Top with a handful of cooked prawns.
