Asian cucumber & chicken noodles

- Cut the cucumber into thin strips, add the cooked chicken then toss with the sugar snaps and cooked noodles.
- Mix the soy sauce, sesame oil, rice vinegar with a pinch of sugar. Toss with the noodles and sprinkle with chilli and spring onions.
Lemon tuna with capers & beans
Mix a small tin of drained tuna with half a tin of mixed beans, 1 tsp capers, ½ chopped red chilli, a handful of cherry tomatoes and some watercress or rocket. Dress with squeezed lemon and season.
