1. Cut the cucumber into thin strips, add the cooked chicken then toss with the sugar snaps and cooked noodles.
2. Mix the soy sauce, sesame oil, rice vinegar with a pinch of sugar. Toss with the noodles and sprinkle with chilli and spring onions.
