Sage & apple scones

Serve these easy baked treats with cheddar, or other similar hard cheese

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Mix all the dry ingredients in a large bowl. Add the butter and rub it in until you have a mixture like coarse breadcrumbs, or put the lot in a food processor and pulse until you have the same result.
  2. Stir in the egg, apple and sage and bring together to form a rough dough - don't knead it too much or you'll end up with heavy scones.
  3. Pat the dough out to about 1.5cm thickness. Stamp out about 8 decent-sized scones. Bake on a buttered baking tray for 12-15 minutes or until cooked through. Serve warm with cheese.

    Unfortunately I think this recipe is missing a vital ingredient. 1 egg and 1 grated apple don't provide nearly enough liquid to bind the ingredients so I also added 100ml of milk at stage 2. This is why I've only given 3-stars. These quantities made 7 normal sized scones and they *were* delicious. Next time I'm also substituting self-raising for the plain flour... I like my scones a little taller!

    I agree - they did need a little milk to bind them. The last time I made this recipe, I added some cheese to the mix and finely chopped spring onion instead of apple and they were lovely!
