Tomato & tamarind soup

Perk up canned tomatoes with a few clever ingredients to make this spicy warming soup

Method

  1. Heat 1 tbsp oil in a large pan. Cook the garlic, ginger and chilli for 3 minutes until fragrant.
  2. Add the spices and cook for a couple of minutes, then add the coriander stalks, lentils, tomatoes and stock. Bring to a simmer and stir in the tamarind paste. Simmer for 20 minutes until lentils are tender, then blend until completely smooth.
  3. Chop the coriander leaves and mix together with the yoghurt. Swirl into the soup before serving.

    Quick Tip: I going to be making this soon but don't have tamarind paste so googled alternatives and you can use either Amchoor or even HP Sauce (as it's sweet & sour!!).

    Ive Just finished making this soup. I added pasta as i did'nt have any lentils. We just had it for lunch and i can't wait to make it again.

    absolutely loved it and I used the 'lazy' chilli, garlic and ginger, which made it even quicker to make. Fantastic flavour. So healthy too.

    Tell me: what's the point of making this soup if you don't have tamarind or lentils? It may be good but it's not THIS recipe. Waitrose sells tamarind as do other supermarkets,I'm sure. As for lentils; how about looking at the recipe and making a shopping list? As for the recipe itself; we loved it. It's one I will make again and again.

    Don't write many comments as normally I can't be bothered or someone else has written something similar, however this soup is worthy of me to make a comment. Easy, even for a moron like me and really delicious, only exotic ingredient is the tamarind and I happened to have some in the cupboard fro any recipe attempt. Worth buying it from any Asian store just for this. Give it a bash and you'll comment back that gorilla was right.

    I found tamarind in my local asian store,as did Uglygorilla.Go and visit said store...usually find massive bunches of corriander for a much lower price than supermarkets.And ask for advice,they are usually delighted to help.

  • a thumb-sized piece root ginger , chopped
  • 2 green chillies , chopped
  • 1 tsp ground cumin
