Gimlet fizz

A gin classic that makes a great start to any entertaining menu

Method

  1. Put the caster sugar in a pan with 6 tbsp water. Simmer gently until all the sugar has dissolved. Simmer for 2 minutes, then cool.
  2. Mix together the gin and lime juice and 3 tbsp of the sugar syrup. Divide between 6 old fashioned glasses filled with ice. Top with a splash of soda and a wedge of lime.
