Shepherd's pies with sweet potato mash

A simple twist on a family favourite gives this dish a new lease of life

Method

  1. Heat a non-stick pan and dry fry the lamb until browned (there should be enough fat from the lamb). Add the onions, carrots, celery and half the rosemary and stir. Reduce the heat and cook with a lid on for 5 mins.
  2. Sprinkle in the flour and stir well. add the wine and stock, season, then bring to a simmer. Simmer for 20 minutes. Meanwhile boil or steam the sweet potato until tender.
  3. Heat the oven to 200C/fan 180C/gas 6. Melt the butter in a small pan, add the chilli, garlic and the rest of the rosemary and sizzle for a couple of minutes. Drain the potatoes, then mash with the flavoured butter.
  4. Divide the lamb mixture between 4 ovenproof dishes. Top with the mash. Cook for 20-30 minutes until the pies are bubbling.

    i made this last night, i loved the chilli butter mashed potato. The mince could have done with a little bit more flavour, but everyone loved it, so it couldn't have been that bad!!

    I made this for the hubby on the weekend but didn't have any lamb mince and used beef instead. It was gorgeous. I added a bit more chilli as we love it. I'll definitley cook this again.

    The mash is delicious, I put a parsnip in it too. I agree with Rhi, the mince could do with more flavour but the luckily the mash makes up for it.

    I made one largish pie for 2 (halved the ingredients, except the chillie and garlic as we love these) We both thought is was Fantastic, Excellent, fabulous! The mash is a real winner!! Will have to hold myself back not to make this daily!

    I substitued the lamb for veggie mince and added a good glug each of tomato ketchup and Worcester sauce and it was delicious. The topping was also gorgeous. Definitely on the "make again" list.

    just finished eating this! It was LOVELY i added tomatos and some cumin, corriander and yellow peppers , a bit of parmasan as a cursty topping for the potato aswell as subsituting the lamb of vegi mince and it was beautiful i also left out the wine just because we didnt have any very tempted to go downstairs and eat whats left in the dish

    added a carrot and a parsnip to the mash used pork me and a knorr vegetable stock cube would leave out the celery next time seasoned with sea salt and grinded black pepper would defo make it again :):)

    I invited a friend over for dinner and we both loved the different take on this pie. I made one big one and it turned out lovely. The mash was really tasty and all in all it was great feel-good food :-)
