Melting leek & goat's cheese pastries

Keep a roll of ready-rolled pastry in the freezer and you can create these easy tarts in no time at all

Method

  1. Cook the leeks with a knob of butter until tender. Cool slightly, season well and stir in the cream and half the egg.
  2. Heat the oven to 200C/fan 180C/gas 6. Cut the pastry into 4. Cut a diagonal slit about 1/2cm into each corner, then fold over each edge to make a narrow border.
  3. Divide the leek mix between the pastries and top with goat's cheese. Glaze the edges of the pastry with the rest of the egg, then bake for 25 minutes until golden and crisp.
