Wai Wai custard
Try this decadent cocktail from Mix bar in Reading instead of a pudding for a real treat

Ready in 10 minutes
- Whisk the eggs in a bowl until light and frothy. Continuing to whisk, add single cream, pressed apple juice, vanilla extract and soft brown sugar. Next add the rum, generous pinches of cinnamon and nutmeg and whisk some more. Serve poured into a jug filled with ice cubes.
- Garnish with a cinnamon stick and star anise.

- 250ml single cream
- 250ml pressed apple juice
- 1 tbsp vanilla extract
- 1 tbsp soft brown sugar
- 250ml good quality aged rum (try El Dorado 12- or 15-year-old)
- a pinch of cinnamon
- a pinch of nutmeg
- 6 cinnamon sticks
- 6 star anise
