Penne baked with three cheeses
A great dish for using up leftover odds and ends of cheese

- Heat the oven to 200C/fan 180C/gas 6. Cook the pasta until al dente then rinse under cold water and drain.
- Melt the butter in a pan, stir in the flour to make a paste then cook for a couple of minutes. Gradually stir in the milk to make a white sauce. Add the hard and blue cheese and stir to melt. Taste and season. Mix with the pasta and divide between 2 ovenproof dishes. Mix the breadcrumbs and parmesan and sprinkle over the top. Bake in the oven until golden and bubbling, about 20 minutes.

- 50g blue cheese such as stilton, gorgonzola or roquefort
- a handful breadcrumbs
- 1 tbsp parmesan , grated
