Chipotle chicken & black bean chilli

Really, really easy and tastes fantastic, just the thing for a cold winter supper

Method

  1. Cook the onion, garlic, pepper and chillies in a little olive oil until softened. Add the cumin and chicken and cook until the chicken starts to colour. Add the chipotle paste and cook for a minute then tip in the tomatoes. Simmer for 20 minutes then tip in the black beans and simmer for another 30 minutes.
  2. Serve in bowls with a dollop of soured cream, a sprinkling of coriander and some tortilla chips on the side.

    This was delicious. Even though I like hot food I didn't use all 4 tablespoons of chipotle paste especially as there were 2 red chillies as well. It freezes well too.

    I have now made this several times and it has become one of my family's staples. I also only use 2 spoons chipotle paste and also use cooked, dried black beans instead of tinned. Delicious served in smaller portions with rice or baked potatoes.

    Can anybody tell me where to buy chipotle paste? So far, I have tried 2 Tesco, Waitrose and Sainsbury to no avail!!

    I think the quality and type of the paste can make a difference for this recipe. Have made it twice once with red kidney beans and once with black beans. The black beans are definitely better. Delish flavours. A new favourite.

    This was a good recipe, I halved it for two of us and use slightly less chipotle paste than stated, loved the smoky flavour it gave.

    So simple - really really easy. Couldn't find chipotle paste in Asda, Morrisons or very large Sainsburys which was a bit of a downer. Found some chipotle marinading sauce instead and used that and a bit smoked paprika to get the smokey flavour. Was delish and really low in fat as well so I was impressed with this recipe. Would definitely make this again, mainly because I'm determined to find the chipotle paste!

    Would definitely make this again. Really enjoyed it. Only put one and a half teaspoons of chipotle in for two people, which was hot enough. Have passed the recipe on to friends.

    Delicious. I couldn't find chipotle paste in the supermarket but found tabasco chipotle sauce instead. Will make again with the paste when I find some.

    We enjoyed this recipe (two adults and a 2.5 year old), it made a nice change from regular chilli con carne. It took the whole (small) jar of chipotle paste to save it from being too bland. I would definitely suggest that you do not make this with chicken breast (as others have suggested); the long cooking time will leave you eating rubber. Maybe some people enjoy that, but it's not to my taste! You can get boneless thigh fillets from Waitrose in packs of 8, which are perfect for this recipe.

    Just awful. Hottest thing I've ever eaten. Inedible. Used 2 Tbsp of discovery chipotle paste still way too hot. Recipe must be a misprint. You only need 1-1 1/2 teaspoons.

    Very easy and tasty. I used all the full amount of chipotle and chillies - next time I might take the seeds out of the chilli as it was quite fierce! Will also try with beef strips next time.

    this was really nice for something different, now we like spicy food but due to previous comments we only put 2 1/2 heaped TEAspoons of chipotle paste in and that was plenty anymore and the heat would have spoilt the dish, next time its only going to be 2 teaspoons!

  • 2 onions , halved and sliced
  • 2 garlic cloves , crushed
  • 2 green peppers , chopped
  • 2 red chillies , sliced
