Ingredients

  • 100g red lentils
  • 450ml vegetable stock
  • 1 small onion, grated or finely chopped
  • 2 tomatoes, chopped
  • ½ tsp turmeric
  • 1 tsp garam masala
  • 1 red chilli, finely chopped
  • 1 large sweet potato, cut into small pieces
  • 2 handfuls young leaf spinach, shredded
  • 2 naan bread, warmed, to serve

Method

  1. Put all the ingredients except the sweet potato, spinach and naans in a pan, bring to a simmer and cook for 10 minutes. Add the sweet potato and cook until tender, another 10-12 minutes. Stir in the spinach and cook for a minute until wilted.
  2. Serve with naans.

This is a bit bland as it is. If I were to remake it I'd increase the tomatoes and add garlic. It goes well with coriander and garlic naan.

Yum yum yum! I added a little garlic, and served it with fresh coriander andyoghurt (basmati rice on the side), and all plates were polished off in minutes! This is WINNER, and so very easy!

This is lovely. Great way of using my veg box. V quick and easy. Sweated onions and spices as suggested by others. Used half tin of toms as had finished toms the day before. Think it needed it to keep it moist enough for me. Cashews also worked well. Might try chick peas in it too next time.

This was really good. Had a great depth of flavour. I had to add extra vegetable stock when I added the sweet potato as there wasn't enough liquid left to cook the sweet potato otherwise. Served with fresh tomatoes and naan bread. Really quick mid-week meal.

Hearty and filling, cheap and healthy. This has become a regular.

Probably tastes better with fresh tomato, but is perfectly acceptable with tinned.

I often make double as can be frozen, or taken to work to be reheated for lunch.

Just made this and it was really lovely and sooo easy! I live in Greece and red chillis are hard to come by...so used one of their spicy green peppers and it gave the Dahl quite a kick!
Will definitely make again

Made this today and took it to work for dinner - got another tupperware box for tomorrow. Tasted great but I added my usual garlic to be sure! A nice change :)

Absolutely gorgeous dahl, highly recommended. I used regular curry powder as I had no garam masala and was delicious. I also used just under a half a tin of tomoatoes which worked really well. I'll be making this again and again :)

Very tasty! I sweated the onion first and added the spices before the stock and lentils. I will definitely be making it again!

I tried this recipie today and I LOVED it.....Instead of Chillies I used chillie powder and I used a tin of chopped tomatoes instead of fresh ones I also added coconut milk and chopped Cilantro. It hit the spot.

Delicious! Substituted shredded cabbage for the spinach but it was a gorgeous filling dinner. Will def be making it again :)

Really, really yummy. I sweated the onions and garlic off as a few others have mentioned, before adding the stock and lentils. I left out the tomatoes, but used a whole bag of spinach. Served it with my own version of mushroom rice - using the cooking method from the bbc good food one pot chicken biryani recipe. I could probably eat this meal every night!

Gorgeous! Really tasty and as others mentioned, makes more than 2 portions. I only had Schwartz medium curry powder and no garam masala but this was still good. Didn't use spinach either and added some coconut when the potato went it for a creamier texture. Will definitely make this again!
