Clementine tarts

Clementines are usually seedless so are particularly handy for baking, like these pretty little tarts

Method

  1. Heat the oven to 200C/180C/gas6. Whisk the eggs into the sugar followed by the zest, lemon and cream. Divide between the tart cases and bake for 10 minutes or until the filling is just set.
  2. To brûlée the tops, scatter over a little caster sugar and blowtorch or put briefly under a very hot grill.

    I did not do the brulee topping, but did brush the base of the tart cases with some melted dark chocolate and put them in the fridge before adding the clementine mixture. SO easy! My sister gave me 9 out of 10 and said I only dropped a point as I didn't make the pastry myself!!

    I made these over Christmas and served half of them bruleed and half not. All of them were delicious and got me loads of compliments! I have never made anything like this before so was unconvinced that they would work - I was very pleasantly surprised how easy they were though ...and I even made my own pastry! not that I'd bother to again ;-)!! They were so yummy that I tried the recipe again recently in a single large shop bought pastry flan dish. The pastry was a bit thick however. Also I used an orange instead of clementines, which was OK but a bit more tart & bitter than the clementine version. If using oranges again I'd use less zest and add a bit more sugar.

    Very easy to make and looked very pretty. However I was a little dissappointed with the flavour and found them rather 'eggy' and a bit bland . Would have liked more sharpness and tang. Should there have been lemon in this recipe, as it is mentioned in the method but not in the ingredient list - perhaps this was what was missing?
