Method

  1. Heat the oil in a medium saucepan, then soften the onion and carrots for a few mins. When soft, turn up the heat, crumble in the lamb and brown, tipping off any excess fat. Add the tomato purée and Worcestershire sauce, then fry for a few mins. Pour over the stock, bring to a simmer, then cover and cook for 40 mins, uncovering halfway.
  2. Meanwhile, heat the oven to 180C/ fan 160C/ gas 4, then make the mash. Boil the potatoes in salted water for 10-15 mins until tender. Drain, then mash with the butter and milk.
  3. Put the mince into an ovenproof dish, top with the mash and ruffle with a fork. The pie can now be chilled and frozen for up to a month. Bake for 20-25 mins until the top is starting to colour and the mince is bubbling through at the edges. (To bake from frozen, cook at 160C/fan 140C/gas 3 for 1 hr-1 hr 20 mins until piping hot in the centre. Flash under the grill to brown, if you like.) Leave to stand for 5 mins before serving.

I used beef mince instead and left out the Wocestershire sauce and tomato puree as I didn't have any but it was still great. My mum loved it! Excellent to pop in the freezer and then bring out on a old winter day.

This is by far the best shepherds pie recipe that I ever came across! I've added fresh ground pepper and nutmeg to the potato mash too.

This was really easy to make and looks great. I added a handful of frozen peas before I popped it in the oven for a few extra vitamins and a bit of colour.

Awesome and easy recipe! I was looking for a nice and simple yet tasty recipe for shepherd's pie and this one definitely scores for me, and I had all the extra ingredients too. None of this overdramatic garlic salt, aubergine essence, cheese imported all the way from china, etc.

This was pretty decent, but a little bland, and I think the cooking time is a bit longer than 20-25 mins to get it right (my oven is pretty rubbish though so that might just be variation). I used beef mince instead of lamb as its all I had, and I added some cumin, basil and chilli powder. Also added mushrooms as they are my favourite, and mustard to the mash. The potato on top was delicious, but I found the underneath slightly bland and a bit too watery. I might try some of the suggestions here to add a little flower next time. Overall very good, I will make again.

Made this last night, easy recipe to follow, empty plates from my fella and 2 year old daughter. Couple of things I will do different next time (steaming potatoes, cooking meat on lower heat for the 40 mins), but for first time it turned out absolutely gorgeous!!
