Method

  1. Heat oven to 220C/fan 200C/gas 7. Beat the olives or sundried tomatoes, garlic and almost all the herbs into the cheese, then season. Cut a slit along the side of each chicken breast, then use your knife to open it out into a pocket.
  2. Stuff each breast with a quarter of the cheese mix, then press to close. Lift onto a greased baking tray. Season the top of the chicken, then overlap tomato slices over the top of each piece of chicken. Season, then scatter with the remaining herbs. Drizzle with olive oil.
  3. Roast for 20 mins until the chicken is golden around the edges and the tomatoes look a little shrivelled. Serve with a green salad and crusty bread to mop up the juices.

Tip

To vary this recipe, you can swap the soft cheese for a soft garlic and herb cheese.

    Very quick and easy to make. I used half fat soft cheese and sundried tomatoes, it tasted fantastic. Will definitely make again.

    I made this recipe for friends tonight as suggested but with proscuitto wrapped around, as I'd seen in many other stuffed chicken recipes. I wish I'd stuck to the recipe as the chicken and filling were delicious and the only thing that didn't work was the ham. I will make this again soon without changing anything because it was so good and simple!

    Didn't have to change a thing, this is a perfect recipe (although I was more heavy handed with the herbs than suggested which was a mistake). Served with rosemary roasted new potatoes and a herby salad, 5 clean plates!!! As it was so easy will try this one again, like the idea of adding pesto to the cream cheese, I can see how that'd work brilliantly!

    Excellent! I cooked this twice with olives when having people over and everybody loved it and gave compliments on how tender the chicken was. They were surprised it wasnt dry since it was cooked in the oven. Would cook it many times more!

    I made this Saturday night and it was fantastic! Used two cloves of garlic though and finely chopped spring onion (as didn't have any chives). Superb. Was a little sceptical as it's chicken breast and worried it would be too dry, but it was far from it. Will definitely make again.

    Great recipe. Put olives, sundried tomatoes and artichokes in cream cheese. Also, wrapped chicken in prosciutto and had some of the cheese mix left over which we mixed with creme fraiche to make a sauce. Next time, and there will certainly be a next time, will also put some toasted pine nuts in.

    Didn't have any olives in (I'd eaten them all) but still tasty. Used fresh golden oregano, parsley, thyme, rosemary, garlic chives and greek oregano because didn't have any dried herbs. Got a thumbs up from my husband. Not anything really special but tasty and will be added to my mid week recipes of choice!
