Method

  1. Boil the potatoes in salted water for 15 mins until just tender. Drain and rinse under cold water to cool, then drain again. Heat the grill.

  2. Meanwhile, mix together the yogurt and mayonnaise, then season with a good squeeze of lemon. Gently stir into the potatoes with the capers, gherkins, most of the spring onion and cucumber.

  3. Season the trout, then grill on a baking sheet, skin-side down, for 3-4 mins depending on thickness, until just cooked. Scatter with lemon zest and serve with the potato salad, scattered with remaining spring onions. Cut the remaining lemon half into wedges for squeezing over.

Just made the potato salad as a side for my dinner. There's no way this would serve two people for a main but it was really nice.

Great recipe. Made it with a curried potato salad and served whole recipe on a bed of watercress, making it even healthier.

The potato salad is great! Worth using all the ingredients rather than various replacements for the full effect.

Great potato salad - I didn't have any capers or gherkins so I substituted a big heaped teaspoon of mayo for one of tartar sauce and it was delicious.

Very tasty dish. The trout is very flavoursome on its own, so doesn't need much seasoning. I added some broad beans to the salad that I had left over and also thinned down the dressing with some milk as otherwise I felt the potato salad would have been too stodgy.

Fantastic, no gherkins so boiled green beans. Not the same flavour I know but added colour and texture! Delicious

Deeeelish. But instead of the trout cooked in this recipe, I made crushed pea an trout fish cakes - recipe available on good food website. Worked a treat.

Lovely dish - especially the potato salad. I didn't have yoghurt so used sour cream instead - absolutely wonderful.
