Trout with creamy potato salad

Try serving fish with a fresh-tasting potato salad instead of plain boiled spuds

Method

  1. Boil the potatoes in salted water for 15 mins until just tender. Drain and rinse under cold water to cool, then drain again. Heat the grill.
  2. Meanwhile, mix together the yogurt and mayonnaise, then season with a good squeeze of lemon. Gently stir into the potatoes with the capers, gherkins, most of the spring onion and cucumber.
  3. Season the trout, then grill on a baking sheet, skin-side down, for 3-4 mins depending on thickness, until just cooked. Scatter with lemon zest and serve with the potato salad, scattered with remaining spring onions. Cut the remaining lemon half into wedges for squeezing over.

Tip

Look for packets of trout in Sainsbury's basics range. They are from the same farms as the fish in their other ranges - the fillets are just mis-matched in size.

    I used chives as I had some growing and didn't have any spring onions (or cucumber for that matter!). Also, I actually mixed the lemon zest into the potato salad dressing, though I only used a quarter of a lemon. Would definitely recommend and make again. Lovely and fresh on a summer evening.

    The potato salad is amazing, really tasty and worth noting for the future; so creamy and the inclusion of capers really gave it more flavour. I used chives instead of spring onions and didn't add the gherkin. Didn't have any yoghurt so used creme fraiche which worked perfectly but I did increase amount of mayo.

    I'm only reviewing the potato salad as I didn't make the trout and it was absolutely fantastic and fresh tasting. I didn't have any capers and used chives instead of spring onions as that's what I had in. Will definately be making this again as it's so simple but tasty.

    Nice tasty dish, next time I will add some lemon zest to the potato salad ad leave out the capers, I just felt with the gherkins the capers weren't necessary. I also used extra light mayo to make it healthier and it still tasted creamy and nice with the yoghurt. Trout is fantastic as ever!

    easy dish but the real winner is the potato salad. i've made several times and always tastes fresh with a lovely crunch (even after a day or two in the fridge).

  • 250g waxy potatoes , such as Charlotte, peeled if you like and halved
  • 4 tsp natural yogurt
  • 4 tsp mayonnaise
  • 1 lemon , ½ zested
  • 1 tbsp small capers , rinsed
  • 4 small gherkins or cornichons, sliced
  • 2 spring onions , finely sliced
  • ¼ cucumber , diced
  • 2 trout fillets
