Fragrant pork & rice one-pot

Deliciously spiced pork meatballs and rice are simmered together in this stew, saving on washing-up

Method

  1. Split the sausage skins, squeeze out the meat, then roll it into small meatballs about the size of a large olive. Heat the oil in a large non-stick saucepan, then brown the meatballs well on all sides until cooked - you might need to do this in batches. Set the meatballs aside.
  2. Add the onion and garlic to the pan. Soften for 5 mins, stir in the spices and rice, then cook for another min. Pour in the stock and tomatoes. Bring to a simmer, scraping up any sausagey bits from the bottom of the pan. Simmer for 10 mins until the rice is just cooked, then stir in the meatballs with some seasoning. Ladle into bowls, scatter with coriander and serve with crusty bread.

Tip

The easiest way to roll a meatball is with slightly wet hands - it will stop the mix sticking to your fingers.

Make it with pasta

Italian pork balls with spaghetti: Brown the sausage meatballs in a frying pan until golden, then set aside. Soften the onion and garlic as above, then stir in 1 tsp dried oregano, the chopped tomatoes, ½ can water and 1 tsp sugar. Simmer until saucy, then stir in the meatballs for a few mins until cooked through. Serve over spaghetti, topped with grated Parmesan.

    Well I made this as I said I would above. Instead of making the sausages into meatballs I just cooked them cut them on half and added to the stew. I bought some lovely 'Jamie Oliver Italian sausages' from Asda. (The bees knees i can tell you). This was so easy yet so delicious.

    I used Jamie Oliver Italian sausages from asda,(the bees knees i can tell you) i diddnt make them into meatballs, i cooked them, halved them and aded to the stew. So easy and so delicious. I will be making this again.

    This is utterly delicious and equally favoured by fussy middle-aged men and children! When in a rush I have cooked the sausages whole and then chopped them to dispense with the fiddling about. It works equally well. I have also used pork mince which also works a treat. I often add extras: peas, diced carrot, broccoli spears etc to get this up t a 5-a-day meal. When weight-watching use spray oil and reduced fat sausages or lean minced pork.

    I used toulouse sausages for extra garlickyness. I did find it took longer to cook the rice than the specified 10mins but this wasnt a problem. All in all it was lovely and I will make it again.

    Went down an absolute treat with my flatmates! A great student/cheap but delicious and filling meal! Added a bit less water than stated so it wasn't too much of a soup! Probably needs a bit more seasoning.

    Fabulous - I'd call it a really thick stew that's just like mulligatawny. Yum!! If you aren't able to serve it straight away, it does thicken up massively, but you can always re-thin it down again with water.

    I love this recipe and have made it many times. The cumin and corriander are superb, and the kitchen smells wonderful when it is cooking. I find it works really well with a) a little more rice [200g] and b) chicken stock instead of vegetable.

    Really moreish, we pumped up the starch with 200g rice instead of 140g so it made a very good saucy rice dish. Definitely making again.
