  • 285ml fresh milk
  • 227g butter (I use unsalted)
  • 900g granulated sugar
  • 2 tbsp golden syrup
  • 1 large tin condensed milk
  • ½ tsp vanilla essence

    1. Lightly grease a 9" by 12" tin with butter.
    2. Heat milk, butter and sugar over low heat until all melted. Add syrup and condensed milk and simmer gently until reaches 114°C.
    3. Let cool down in pan until just starting to set around edge and beat in vanilla essence and continue beating until goes slightly grained in texture. Pour into tin. Leave to cool.
