Mac 'n' cheese with bacon

Try this combination of two midweek favourites, salty bacon and creamy macaroni cheese - yum!

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Put the breadcrumbs on a baking sheet, drizzle with oil, season, and bake for 5 minutes.
  2. Melt the butter in a pan. Add the garlic and mustard and cook for 1 minute. Add the flour and whisk on a low heat for 1 minute. Gradually whisk in the milk, then bring to a boil, whisking. Reduce heat and simmer until thick (about 4 minutes). Stir in the cheese until melted.
  3. Boil the pasta until al dente, drain and mix with the cheese sauce and bacon. Spoon into 2 large ramekins. Top each with breadcrumbs and bake for 20 minutes until golden.

    Yum, Yum, even my 5 year old ate it, and he's the fussiest eater I know, I used slightly less mustard powder because it was for the kids but the garlic more than made up for it.

    This was surprisingly easy and absolutely fabulous. I made it in one large dish instead of the ramekins, used Cheddar instead of Red Leicester and used Back Bacon instead of streaky (basically what was in the fridge). The breadcrumbs drizzled with oil topped off this 'must do again' dish. Passing this recipe on for sure!

    Very tasty. The breadcrumbs do need to be quite chunky, though - mine were a bit fine and ended up as a thin crust rather than a crunchy topping (although it still tasted fine!).

    Very simple and very tasty! I added some broccolli spears at the bottom of the dish before adding the rest of the ingredients(as they were left over and in the fridge) and it worked brilliantly.

    Delicious. I used parmesan as a topping as I didn't have breadcrumbs and it was so tasty. Only downside I suppose is the calorie count but as a treat who cares? Used back bacon also because that's what was in the fridge.
