Yakitori chicken skewers with miso

Chicken thighs are a brilliant cheap eat, and taste great with this sticky sauce

Method

  1. Soak the skewers in water for 15 minutes. Mix the miso, sugar and mirin until the sugar dissolves. Thread the chicken and onions alternately onto skewers.
  2. Brush the skewers with some of the sauce, then grill until cooked through, brushing with more sauce as you go.

Cajun chicken with lemon mayo rolls

Heat oven to 200C/fan 180C/gas 6. Sprinkle 3 tsp cajun seasoning over 2 large chicken thigh fillets along with some seasoning. Drizzle with a little oil and cook for 20 minutes until a skewer inserted gives off clear juices. Mix 2 tbsp mayo with the zest from ½ lemon. Spread some on each side of 2 rolls and top two with a tomato slice. When the chicken is cooked, put it on the tomato and top with the other half of roll.
