Quick carrot & walnut bread

Method

  1. Heat oven to 230C/fan 210C/gas 8. Mix the flours, salt and bicarbonate of soda, then stir in the carrot, walnuts and yogurt, followed by enough of the milk to make a soft, quite sticky dough.
  2. Tip onto a floured surface and form a flat ball, put on a baking sheet, slash the top and bake for 30 minutes until risen and cooked. It'll sound hollow when you tap it.

    First time I made bread and this turned out to be a very useful recipe... I used fromage frais instead of the yogurt. The dough seemed somewhat dry but nonetheless it came out fine, after approx. 40 mins! I'll make it again, but might experiment with different ingredients.

    Horrible, horrible, horrible!! Ended with a flavourless sticky mess that was overcooked on the outside, but under cooked on the inside. Waste of money and ingredients.

    It was my very first attempt at making bread ... and i will never look back it shall be baking bread all the way!!!! excellent receipe husband was very impressed .. and me very proud of myself...left the bread in the oven for 5 extra mins as suggested by the others.. keep up the good work and the lovely recipes...

    Made this for the first time, no problems. Came out exactly as it should and was delicious. So easy to make it'll be criminal not to do it again soon. For me it makes a great simple supper with some soup.

    Very, very nice, and relatively easy to make. Lovely crunchy, nutty crusts. Makes quite a large loaf, but we could easily have eaten it all (I had to pry it away from my partner). Kept it in the fridge and warmed up the remaining slices in the oven when needed, so made it last three days (although I think it does need to be heated or toasted after the first day. Served as an accompaniment to carrot and cumin soup, which worked very well.

    Cooked it for an extra 15 mins as wasn't cooked in middle, think I didnt flatten it enough before putting it in oven, any comments on this??

    I absolutely love this bread, although I did make it without the walnuts and carrots. It was so easy to make and ready in next to no time. I didn't have any low fat Greek yoghurt so used natural yoghurt instead, which worked really well. I made a loaf yesterday and am having to make another today as it was so popular! A very simple, easy to do recipe which tastes complicated!

    After reading so much of it's gooey centre, I divided the bread into two equal portions and baked them together for 30 mins. The centres came out cooked as the breads are now half the actual size. I ran out of flour so I omitted the step where I had to put dough on floured surface. I just dumped the two slobs onto greased baking sheet. Actually I was lazy to heat up the big oven, and used my little toaster oven instead which worked just fine! I also used Thermomix to mix all, then knead for 2 mins.

    Made this to waft lovely smells around the house as we are selling it at the moment. Have never made bread and am a novice baker. This was a sticky mess when I put it in the oven and I really wasn't convinced. But turned out perfect and tasted great. I baked for slightly longer Than stated and also let it sit in the oven for another 20 mins or so after switching the oven off. Perfect. Will try with maybe cinnamon and some dried fruit next.

    I used natural yogurt as I didn't have greek yogurt. It's not too bad, but I did have to bake it an extra 10-15 mins as it was quite sticky inside.
