Quick carrot & walnut bread

Method

  1. Heat oven to 230C/fan 210C/gas 8. Mix the flours, salt and bicarbonate of soda, then stir in the carrot, walnuts and yogurt, followed by enough of the milk to make a soft, quite sticky dough.
  2. Tip onto a floured surface and form a flat ball, put on a baking sheet, slash the top and bake for 30 minutes until risen and cooked. It'll sound hollow when you tap it.

    Really good, but took longer than the time stated, so I ended up having to cut out the middle bit that was still gooey. Luckily no-one noticed !

    I didn't have a lot of success with this. I have made it twice and each time it was still gooey in the centre and well done on the outside. The second time I cut down on the milk as I thought it must have been too wet but that didn't make any difference. I'm pretty sure my oven temp is accurate as everything else I bake turns out ok. I'm a bit reluctant to try it again as it's a waste of ingredients. :-(

    I made this last night to accompany the smoked salmon with beetroot and vodka creme fraiche starter (simple and impressive) and it went down a storm. My guests couldn't believe a) that I'd made it and b) that I made it the same evening as the dinner party (on a work night after arriving home from work). It realy was as simple and quick as it appears in the recipe although wasn't sure what a 'flat ball' was and was a bit concerned whether it was cooked enough after the 30 minutes, but gave it 5 minutes extra and took it out. It is quite a dense texture but very tasty. I added rather more than a handful of walnuts (although wasted a few as I forgot I left them under the grill toasting!). I enjoyed some toasted with cheese for lunch and have frozen a couple of pieces too (just to stop me eating the lot!)

    have baked this several times and served to paying guests who loved it, I substitute walnuts for Pine Nuts and have also added apricot too. its yummy x

    I made this and it looked and smelt great, just like the picture. However, it was really doughy and stodgy and too sweet to be called 'bread' - tastes more like cake.

    This was a huge squidgy mess on the worktop. After managing to heave it on to the baking tray, it actually cooked really well. I forgot to buy wholemeal flour so upped the plain flour. I will try it again using wholemeal. Might be a more interesting flavour and texture. Served with vegetable soup, cheese and chutney. Yum - also used home-grown carrots - first ever!

    This bread is really nice and very easy to make. My boyfriend absolutely LOVED it and has requested me to makre it gain... soon! Personally I think it's a bit too nutty, so I will be putting fewer walnutsd in next time. Thanks for the recipe!

    followed the recipe to a T,ended up wth a sticky mess in the bowl. managed to get on baking paper and in the oven and to my surprise it was lovely. Is the sticky mess part of the deal or did i do something wrong

    loved it, first time i've made bread. i used Soya yogurt and milk instead and it worked fine, very dense but I like that.. I also put many more walnuts in than a handful, also put more walnuts and sunflower seeds on the top. I had it with root veg & lentil soup (also homemade), it definately needed more than 30 mins though, inside was still gooey so I turned the oven down and popped it back in for 10 mins, lovely!

    Tried this today, my first adventure into bread making. I put mine in for 35mins following suggestions from other users. It was still doughy in the middle, and is currently back in the oven for another 10mins. But, it tastes fab to me and my husband (am ignoring my five year olds comments about it, unrefined immature tastebuds!).Looking forward to doing hmm, banana and sultana, and maybe just cinnamon and raisin, all very exciting. Thank you for making me feel like I can cook!

    Not greatly impressed with this bread - didn't taste of much in particular, and the texture wasn't good. Fairly bland all round, even straight out of the oven! Also, because of the wetness of the dough, not pleasant to work with in the way that yeast dough is.

    Fab...the family loved this recipe. I'd left the bread in the oven 5 minutes longer than stated just because other reviewers had suggested this. Will definitely be making this again...soon!

    I loved it, I used soya yogurt and milk and it was lovely, quite dense but I liked that. I also put sunflower seeds on top. i would definately make it again and vary the ingredients, I think it will be really versatile.
