- 350g plain flour
- 150g wholemeal flour
- 1 tsp salt
- 2 tsp bicarbonate of soda
- 150g carrots, peeled and grated
- a handful walnuts, toasted
- 300ml low-fat Greek yogurt
- 125ml semi-skimmed milk

Method
- Heat oven to 230C/fan 210C/gas 8. Mix the flours, salt and bicarbonate of soda, then stir in the carrot, walnuts and yogurt, followed by enough of the milk to make a soft, quite sticky dough.
- Tip onto a floured surface and form a flat ball, put on a baking sheet, slash the top and bake for 30 minutes until risen and cooked. It’ll sound hollow when you tap it.

i've been making bread for a while but i definately wont be trying this again.As a few people have already commented it was well cooked on the outside but uncooked on the inside and had no taste at all. initially as i started to make it i felt there was too much flour in the recipe and the end result was heavy which makes me think my initial thought was right. all in all, a disaster!
Made this to waft lovely smells around the house as we are selling it at the moment. Have never made bread and am a novice baker. This was a sticky mess when I put it in the oven and I really wasn't convinced. But turned out perfect and tasted great. I baked for slightly longer Than stated and also let it sit in the oven for another 20 mins or so after switching the oven off. Perfect. Will try with maybe cinnamon and some dried fruit next.
After reading so much of it's gooey centre, I divided the bread into two equal portions and baked them together for 30 mins. The centres came out cooked as the breads are now half the actual size. I ran out of flour so I omitted the step where I had to put dough on floured surface. I just dumped the two slobs onto greased baking sheet.
Actually I was lazy to heat up the big oven, and used my little toaster oven instead which worked just fine!
I also used Thermomix to mix all, then knead for 2 mins.
