Quick carrot & walnut bread

Method

  1. Heat oven to 230C/fan 210C/gas 8. Mix the flours, salt and bicarbonate of soda, then stir in the carrot, walnuts and yogurt, followed by enough of the milk to make a soft, quite sticky dough.
  2. Tip onto a floured surface and form a flat ball, put on a baking sheet, slash the top and bake for 30 minutes until risen and cooked. It'll sound hollow when you tap it.

    Absolutely great - will definitely make again, great with goats cheese and a green salad dressed with a little walnut oil. I still can't believe how easy it was to make! I've given the recipe to several friends who have asked me for it. It's also great toasted!

    This is a great easy recipe, especially if you don't have the time/the patience to make yeast dough! I think the ingredients could be varied a bit as well, I might try making it with courgette instead of carrots, or add sultanas for a hint of sweetness. I also substituted brown rice flour (can be bought from health food stores!) for the plain flour to make it even healthier.

    This has to be the simplest bread to make. Really tasty and wonderful crust. I use baking powder and milk reather than baking soda and buttermilk. Also tried recipe with the cheaper low fat plain yogurt and it looked and tasted just as good. Have substituted bananas for the carrots and that turned out yummie as well.

    No i did not wave or change any ingredients , just make as it is. Was at home n trying dough for making bread, and just make it like this as i do had a ventilated oven at home so its easy for me.

    Made this but don't think the oven was hot enough and it was still a bit sticky on the inside, still everyone loved it! served with roast chicken pieces, green beans and 'feta baked with oregano and tomatoes' also on this site. Was a great hit!

    This is a fantastic recipe and I'll never buy bread again as a result. I'd recommend adding toasted coriander seeds, replacing the yogurt/milk with 500g fromage frais for a denser texture. I'd also recommend baking it for 45 mins as i found the middle only just gets cooked with 30 mins on the timer...
