Tomato & basil soup

Open the cupboard and make the most of tinned tomatoes with this super fast soup

Method

  1. Cook the onion, carrot, celery and crushed garlic in the olive oil, until softened. Add the tinned tomatoes and vegetable stock. Simmer for 15 minutes.
  2. Whizz in a blender. Stir in the double cream and a handful chopped basil.

Winter gazpacho

Put 2 drained tins plum tomatoes, 1 chopped red onion, 1/2 chopped cucumber, 1 chopped red pepper, 1 chopped garlic clove, 200ml vegetable stock, 2 tbsp sherry vinegar in a blender. Whizz until smooth and season well. Chill for 2-3 hours. Serve chilled, topped with diced cucumber, hardboiled egg, red onion, red pepper and croutons.

    I cut up my own fresh tomatoes, added a bit of chilli and skipped the cream and it still tasted good. It really was a very easy soup to make!

    Very nice soup although it was quite thick so next time I would add more vegetable stock. Also added creme fraiche instead of double cream and tomato puree (1 tbsp).

    Didn't add celery and used creme fraiche instead of double cream. Didn't really like it, and I love tomato soup usually. Felt it was lacking something, tasted like tinned tomatoes and basil in a bowl.

    This is a fabulous recipe. I make batches with tomatoes from the garden (I don`t always have basil) and I freeze in empty plastic milk bottles (well rinsed). It always tastes fresh-out-of-the-garden, even in midwinter.

    Tried this today for lunch. I topped this with a slice of salt & pepper baguette with melted cheese on top it was yummy. Will definately be making this again, it's so quick and easy.

    Brilliant recipe - amazed at how good this was. Omitted the double cream as wanted a healthy soup, but no doubt adding that in will give it a great taste for those that want a bit more flavour.
